Acerola Cherry (Malpighia emarginata)
Often called the Barbados cherry, acerola originates from Central and South America and is renowned for its exceptionally high vitamin C content.
Green, unripe acerola contains almost twice as much vitamin C as ripe fruit, making the timing of harvest crucial.
Because acerola deteriorates within 3–5 days after picking, freeze-drying (vacuum + low temperature) is used to preserve its delicate phytochemicals.
